Inker-Approved Game Day Recipes and Traditions

We heard there’s a big sports game this weekend, so we asked around the offices to see what recipes and traditions Inkers can’t live without on the big day. From cream cheese to cats to childhood memories, Inkers and their families take their big games very seriously!

Oreo Footballs – Rebecca from Fairfax’s favorite game day treat!

Ingredients:
1 package of Oreo Cookies, finely crushed
I like to mix it up with different flavor Oreo Cookies (peanut butter, mint, etc.)
1 (8 ounce) package cream cheese, softened)
1 bag of semi-sweet baking chocolate, melted
1/2 bag of white chocolate chips, melted and put in piping bag (or ziplock bag with corner cut as a make-shift piping bag)

Directions:
1. Mix cream cheese and cookie crumbs until well blended
2. Shape into mini football shaped balls and freeze for 10 minutes.
3. Dip balls into melted chocolate; place in single layer in shallow wax paper-lined pan.
4. With melted white chocolate, pipe balls to look like footballs (one line with three short lines across)

 


 

Heather from Reno shares this heart-warming family tradition:

“I’m a Minnesota Vikings fan through and through, but I am pulling for the Panthers this year.  My grandparents used to live in Spartanburg, South Carolina, which is where the Panthers’ summer training camp is.  Every summer that we would visit, we would spend an afternoon or two at the camp, watching the players go through drills and asking for autographs.  It’s one of my favorite childhood memories!  Because of that, I will always have a soft spot for the Panthers!”

 


 

Buffalo Chicken Dip- Courtesy of Brie from Fairfax:

Ingredients:

Two 8 Ounce Packages of 1/3 less Fat Philly Cream Cheese
1 Package of Low Fat Shredded Cheddar Cheese
2-3 lbs of chicken (you can boil and shred or if you are in a rush you can buy the canned stuff)
1/2 bottle Fat Free Ranch Dressing
1 Bottle Frank’s Red Hot Sauce (or Frank’s Buffalo Wing Sauce)

 

Directions:
Combine in a pot until all cheese melts and serve with celery and tortilla chips (also goes great on hot dogs)

 


 

Jes from Fairfax has a family tradition that includes the WHOLE family:

“When the Red Sox won the 2004 World Series, breaking their “curse”, my family’s cat Lulu happened to be sitting in my dad’s lap. So now, every time the Red Sox are in the playoffs, Lulu HAS to be sitting in his lap for the games because she’s his good-luck charm. I think Lulu wishes that he just didn’t wash his jersey or something instead.”

 


 

Cake Batter Dip for Mimi from Reno’s Super Bowl Birthday!

“When the Super Bowl lands on my birthday (So far….only twice! Including this year) I make a  Cake Batter Dip. In honor of all of the eating and feasting that we do on Super Bowl Sunday….and a nice festive-ness for birthdays. “

Ingredients:
8 oz package of cream cheese, room temperature
½ cup sour cream
½ cup white cake mix
1 cup powdered sugar
1 tsp vanilla extract
¼ cup sprinkles
Graham Crackers for dipping

Directions:

1. Place cream cheese in your mixing bowl and beat on medium high speed for 3 minutes, or until it becomes light and whipped.
2. Bring speed down to medium and add the sour cream and vanilla, mix until incorporated. Slowly add the powdered sugar and cake mix to the bowl and mix until combined. Scrape the sides of the bowl with a rubber spatula and then gently fold in the sprinkles.
3. Serve cold with graham crackers, pretzels, or fresh fruit slices. Enjoy!
